These cookies are SO easy! I got them from Sandra Lee Semi-Homemade Desserts (I found this for $5 at a book fair!). There are 3 ingredients and they came together so fast.
1 pkg (18 oz.) refrigerated sugar cookie dough, room temperature
1/2 C. peanut butter
1 can (16 oz.) chocolate frosting
**special equipment-mini muffin tin (I just rolled them into small balls and they turned out fine)
1. preheat oven to 350 degrees. Spray mini muffin tins (if you have them, I used a nonstick cookie sheet and didn't spray and they didn't stick at all.)
2. Mix cookie dough and peanut butter just until swirled. Press 1 tsp into each muffin tin (or make walnut sized balls). Bake for 12 minutes or until cookies are slightly golden. Let cool slightly in pan (or on sheet).
3. Remove cookies from pan (or sheet) and place on cooling rack (I use tin foil). Make a slight indentation in the center of each cookie with the back of spoon (I used a measuring spoon-nice and round). When cookies are completely cool place about a tsp. of frosting in the center.
**For placing frosting I used a trick I learned off food network and make a pastry bag from a Ziploc. You just put the frosting in the bag and snip off a small corner and there you go! Instant piping bag! This made it a lot easier for Natalie to help frost the cookies. :)

Her show is really good. It makes you feel like you can really be a gourmet cook. Even if half the ingredients come from a box.
she is for sure one of my favorites b/c I can actually cook her stuff! I love paula deen, and I wish I could afford to cook like barefoot contessa!
Oh yeah love me some Paula Deen, the accent rocks. I especially love how she says Banana Puddin! Barefoot Contessa kinda bugs me a little, I like Giada. Or have you watched Take Home Chef on TLC? That guy could take me home and cook fish sticks and mac and cheese and I would melt!
I don't have cable so I don't watch any of those shows. Amy and I used to watch one on 13, and I think his name was Graham Kerr. I think...

Thanks alot Shannon! I made my version of peanut butter fudge cookies tonight. Slice-n-bake peanut butter dough with chocolate chips mixed in. YUM! Smoosh it all together, roll into balls, bake and voila!

Not fair all, I can't have any and it looks so easy to make and so good. Being a diabetic sure has a lot of drawback, especially when I love sweets. But I think 43 years of working among all the goodies they bring to work made me more prone to being a diabetic even if it does run in the family. But I will dream that I had Peanut Butter Fudge Cookies!
